Caro’Bout Fudge Skinny Mints

Ingredients
Cookies:
Eat G.A.N.G.S.T.E.R. Caro’Bout Fudge Cookie Mix
1/4 c. palm shortening
2 T. water
6 T. maple syrup
1 t. peppermint flavoring
tapioca flour, if needed

 

Carob Coating:
1/2 c. coconut oil
1/4 c. carob powder
2 t. honey (adjust to taste)
1/2 t. salt
1/8 t. peppermint flavoring

 

Directions:
1.Preheat oven to 350° F.
2.Mix your eat G.A.N.G.S.T.E.R. Caro’Bout Fudge Cookie Mix as directed, substituting the recommended Coconut Oil with the same amount of Palm Shortening (this will allow for a thinner crispier cookie).
3.Add peppermint flavoring into the mix (Simply Organic is a great one!). Mix until you achieve a smooth dough ball.
4.Roll out dough on parchment, adding a bit of tapioca flour if needed to avoid stickiness. Dough should be about 1/4 inch thick.
5.Cut into desired shapes and place onto parchment lined cookie sheet.
6.Bake for 10-12 minutes.
7.While cookies bake, mix all of the carob coating ingredients in a bowl.
8.Remove cookies from oven and allow them to cool.
9.Dip into carob coating, ensuring both sides are fully coated. For a firmer coating, place into freezer prior to enjoying!
