1/2 cup Sweet Potato Pasta
1/2 cup tuna
1/4 large red onion
3 cloves garlic
1 tbsp olive oil
1 tbsp lime juice
Parsley and celery to taste
Optional – 1 cup spinach
- Sauté onions, garlic, parsley and celery with tuna in olive oil and lime juice.
- Add spinach if desired.
- Boil then drain sweet potato pasta.
- Mix pasta with sautéd tuna and spoon into casserole dish.
- Bake at 400 degrees for 10 mins.
