AIP Tigernut Maple Granola

Ingredients:

1/2 cup arrowroot starch
3/4 cup unsweetened shredded coconut
1/2 cup coconut flakes
1/4 cup tigernut flour, sifted
1/2 cup unsweetened banana chips, crushed (optional)
1/4 tsp sea salt
1 1/2 tsp cinnamon
1/2 tsp ginger
1/4 cup raisins
1/3 cup maple syrup + 1 more Tbsp if needed

 

Directions:

  1. Preheat the oven to 375 degrees.
  2. Line a baking sheet with parchment paper.
  3. In a large bowl mix together all ingredients EXCEPT raisins and syrup.
  4. Fold in the raisins. Add in maple syrup and mix until well combined. Add more syrup if needed.
  5. Spoon drop tsp-sized amounts onto the lined baking sheet. Bake for approximately 15 minutes or until crispy and golden brown.
  6. Let cool completely, then transfer into glass storage in the fridge for up to 5 days.
