Ingredients:
1 lb. ground beef
1 lb. organic chicken livers, ground(can use blender or food processor)
1.5 oz. of pork panko
1⁄4 cup + 1 tbsp. cassava flour
3 tbsp. + 1⁄4 cup KC Naturals Imitation Ketchup
1/2 onion, chopped
2 garlic cloves, minced
1-2 tbsp. avocado oil
1 tsp. garlic granules
1 tsp. dried parsley
1 tsp. sea salt
6 slices of bacon, cooked & crumbled into bits
Directions:
1.Preheat oven to 375° F. In a large skillet, heat avocado oil and cook onions until translucent.
2.Add minced garlic and cook for one more minute.
3.Remove onions from skillet and add to a large bowl with ground beef, ground liver, cassava flour, 3 tbsp. KC ketchup, garlic granules, sea salt, and 1/2 package of pork panko.
4.Gently mix with a stand or hand mixer until incorporated (on the lowest speed). Do not over mix.
5.Transfer the mixture into greased mini loaf pans (you can use avocado oil, bacon fat, tallow, or palm shortening) and bake for 20 minutes. Remove from oven, spreading the ketchup over the top. Place back into oven and cook for 30 to 35 additional minutes, until thoroughly cooked through the center.
6.Remove meat loaf from oven and sprinkle the tops with the bacon bits. Let them rest for 10 minutes before removing them from the molds.
