Ingredients:
1/3 cup coconut syrup
2 tablespoons coconut sugar
1 cup water
10 ounces coconut water
8 mint leaves
juice of one lime
1 cup pineapple chunks
12+ ice cubes
Directions:
- Blend the pineapple chunks, coconut sugar, and water in a blender to make pineapple simple syrup. Simmer over low heat for 30 minutes, stirring occasionally. Place in fridge until cooled.
- Blend together the pineapple simple syrup, coconut water, mint leaves, lime juice, and ice.
- Pour in a fun glass, garnish with pineapple wedges, and enjoy!
