AIP Coconut Cauliflower Mash

Ingredients:

1 head of cauliflower, cut into florets

1 tbsp duck fat

1 tsp turmeric

1/2 tsp sea salt

1/2 coconut milk

Directions:

1. Place cauliflower into a steamer and cook until tender. Alternatively, you can roast the cauliflower with the duck fat in the oven for 1 hour at 375 F until golden brown and tender.

2. Once soft, remove and place in a blender with duck fat (add additional if necessary), sea salt, turmeric, and coconut milk.

3. Blend on high until creamy and smooth.
