AIP “Chocolate Peanut Butter” Waffles

2/3 cup Roots Tigernut Waffle & Pancake Mix

2 ½ Tbsp. oil

3 ½ Tbsp. coconut milk

2 Tbsp. carob powder

1 Tbsp. Roots Tigernut Butter

Date Lady Original Date Syrup




  1. Whisk together oil and coconut milk in a small bowl.
  2. Add waffle mix, carob powder, and tigernut butter and whisk until smooth in a thin batter. If too thick, add a bit more coconut milk.
  3. Let sit for one minute.
  4. Pour onto a hot waffle iron. Cook according to manufacturer’s directions (it may take a little longer than normal).
  5. Top with sliced bananas and Date Lady Original Date Syrup.
