AIP Blueberry Popsicles

Ingredients:

2 heaping cups blueberries (fresh or frozen)

1 cup full fat coconut cream or coconut yogurt

1/3 cup maple syrup

1/3 cup Vermont Village Blueberries & Honey Sipping Vinegar

 

Directions:

  1. Place all of the ingredients into a blender and mix until fully blended (about 1-2 minutes).
  2. Pour mix into popsicle molds and freeze.

Makes about 6 popsicles, depending on size. If you don’t have a mold, or if popsicles just aren’t your thing, the mix also works well as a smoothie! Works well with plain maple syrup or homemade infused flavors. Have fun and play around with different flavor combinations!
