Ingredients:
1/4 cup + 2 tbsp coconut flour
1/4 cup coconut oil or ghee, melted
2 tbsp honey
Pinch of salt
1/4 Unsweetened shredded coconut
10 Apricity caramels at room temp
Directions:
1. Preheat oven to 350F.
2. In a mixing bowl, add the coconut flour, coconut oil, honey and salt. Mix until evenly combined and a cookie dough forms.
3. Divide the dough into 20 small balls and flatten down into circles on a parchment lined baking sheet.
4. Bake for 4-5 minutes. These bake very quickly, so keep an eye on them. Let the cookies cool.
